How to cook Shrimp and Summer Squash Stir Fry
- Shrimp Marinade
- 1/2 lb shrimp, peeled and deveined
- 1 tsp cornstarch
- 1 tsp michiu / rice cooking wine
- 1/2 tsp salt
- 2 tablespoons cooking oil/fat of choice
- 1 large summer squash, sliced and halved
- 2 green onions, chopped 1 inch length
- Salt to taste
Instructions
In a bowl, mix shrimp, and cornstarch, rice cooking wine, and salt together. Allow it to marinade for about 15-30 minutes.
In a cooking pan, add the cooking oil. Then add shrimp and stir fry at high heat until shrimp starts to turn pink. Remove from heat.
Add the remaining oil to the skillet, and add the summer squash and green onions. Stir fry for a couple minutes or until the summer squash is tender to your liking.
Add the shrimp back to the pan, and add salt to taste. Stir fry for a few more seconds or until shrimp is fully cooked.
Remove from heat, and serve!
