Keto Sheet Pan Sausage and Peppers – I hope everyone had a great new year! Here is a great meal that’s healthy and easy to help keep you eating keto for the new years. Sheet pan meals are underrated, in my opinion. They are so quick to make but roasting everything brings out those deep flavors. You can use whatever type of sausage you prefer, just read the ingredients and make sure it’s keto-friendly. I used a roasted garlic and mozzarella sausage from my local grocery store.

I served the peppers, onions and sausage over steamed cauliflower just to stretch it out a bit. It’s also delicious over spaghetti squash with marinara. Or, keep it simple and just eat it on it’s own.

Ingredients

  • 3-4 bell peppers, any color
  • 1 medium onion
  • 4-5 links of precooked sausage, Italian is always good (learn more about sausages here!)
  • 2 tablespoons avocado oil
  • 1 teaspoon dried oregano
  • 1 teaspoon granulated garlic
  • 1 teaspoon salt

Directions

Preheat your oven to 400 degrees.

Chop your bell peppers and onions into strips. You don’t want them too thin or too thick, about ¼”. Mix your seasonings into your oil. Cut your sausage links in half.

I line my baking sheet with parchment paper, but it is not necessary. Place all of your peppers, onions and sausages on the baking sheet. Pour the oil mixture over, toss them around, and spread them out so nothing is stacked on top of each other.

Put it in the oven and bake for 30-35 minutes.

That is it! Dish it up. I sliced the sausage up into 1” pieces first before serving, but that is up to you.
