Oven Roasted Garlic Parmesan Broccoli

Growing up I never understood why my friends didn’t like to eat broccoli when we were kids. Broccoli has always been super tasty to me as my mom normally would stir fry it with garlic. Looking back, I personally blame the school cafeteria making those mushy green broccoli that didn’t taste like anything. My point is – preparation is key! This Oven Roasted Garlic Parmesan Broccoli recipe is a delicious way to prepare broccoli!

By the way, Broccoli is super healthy for you! Just 100 grams of broccoli will give you over 150% of your recommended daily intake of Vitamin C! Besides that, it is also high in vitamin A, iron, vitamin K, B-complex vitamins, zinc, phosphorus and phyto-nutrients.

Ingredients

  • 2 Crowns of Broccoli, cut in 2 inch florets
  • 3 tbsp Olive Oil
  • 3 Garlic cloves, minced
  • 1 tsp Salt (I love garlic so much, I use garlic salt)
  • 4 tbsp Grated Parmesan (Separated in to two 2-tablespoons)

You have the option to use minced garlic from a bottle too, but I find that it is a lot more flavorful to use fresh garlic cloves minced. If you do use it from the bottle, add about 3 teaspoons.

Instructions

Preheat the oven to 400 degrees. Line a baking sheet with aluminum foil.

In a large bowl, combine broccoli, olive oil, garlic, and salt. Toss to coat evenly.

Place broccoli on baking sheet in a single layer. I find that it’s okay for them to touch but you need to make sure none are on top of the other.

Bake in oven for 15 minutes, or until broccoli is tender and lightly browned in some areas.

Remove from oven, and sprinkle 2 tbsp of the grated parmesan evenly on broccoli.

Pop it back in the oven for another 5 minutes.

Remove from oven, and sprinkle the other 2 tbsp of grated parmesan evenly on broccoli.

Transfer to dish and serve!
