Zucchini Tomato Stir Fry

Zucchini Tomato Stir Fry is a super easy and tasty veggie side dish! You can make this to go with any entrée!

For example, one time I made it to go with my Lemon Garlic Mahi Mahi – and it went super well together!

How to cook Zucchini Tomato Stir Fry

First, gather your ingredients

  • 2 large zucchini, cut in to chunks
  • 1 large tomato (or 4 roma tomatoes), cut in to wedges
  • 2 tbsp cooking oil
  • 3 cloves of garlic, minced
  • 1 tsp of sugar
  • Salt and pepper, to taste

Heat cooking oil in a pan or wok on high heat.

Add zucchini first as it takes a little longer to cook than tomatoes. Allow it to cook while stirring.

Add tomatoes, and cook for another 5 minutes while stirring. You can cover with a lid for a minute to speed up the process.

Add sugar, salt and pepper to taste.

Remove from heat and serve!

Yield: 4 servings
