Keto Broccoli Cheese Soup

This keto broccoli cheese soup is perfect for any meal! It’s super creamy and the sharp cheddar goes so well with the broccoli.

When I was little growing up in the states, there are a few American / Western soups that were my favorites and these included Clam Chowder, Corn Chowder, and Broccoli Cheese Soup. I love how these soups were all creamy and soup-er (haha, get it) tasty.

Is broccoli and cheese soup keto?

That really highly depends on the recipe you are using. Often times broccoli and cheese soup will use flour or other ingredients higher in carbohydrates which will make the soup not keto or low carb.

This broccoli and cheese soup IS keto. So if you follow this recipe in order to cook some delicious broccoli and cheese soup, you should be within limits.

This recipe will cook about 8 servings, and if you divide the entire soup up by 8 you will be at 8g of carbs per serving.

How to make keto broccoli cheese soup

First gather your ingredients:

  • 1 tbsp olive oil
  • 4 cloves of garlic, minced (2 tsp of minced garlic)
  • 12 oz of Broccoli, chopped
  • 2 1/2 cups Chicken broth
  • 1 cup heavy cream
  • 2 1/2 cups Shredded Sharp Cheddar Cheese
  • 1 teaspoon garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp oregano
  • 1/2 tsp parsley

In a soup pot, add olive oil and garlic and sauté for about a minute on high heat.

Add broccoli, chicken broth and heavy cream and mix well.

Bring to a boil and then lower the heat and let it simmer for 15 minutes or until broccoli is tender.

Add shredded cheese 1/2 cup at a time, and stirring to mix well after each 1/2 cup.

Add garlic powder, paprika, oregano, and parsley and stir to combine well.

Remove from heat and serve!
