Celery health benefits
Did you know that celery is a healthy vegetable? Celery contains a good amount of fiber, vitamin K, and also some Vitamin A and C, Calcium, and Iron. And it is super low in calories! Two stalks of celery is only 15 calories.

How to Stir Fry Celery with Eggs (Step by Step)
First, gather your ingredients:
- 6-8 stalks of celery, chopped to ½ inch (depending on how big your stalks are)
- 3 cloves of garlic, crushed
- 1 tablespoon cooking oil
- 3 eggs, beaten
- Salt, to taste
- Pepper (optional)
If you haven't already, cut the celery and then using a knife, cut the celery in to about ½ inch pieces. Crush the garlic. And in a small bowl, beat the 3 eggs with a sprinkle of salt.

In a cooking pan or wok, add cooking oil. Allow it to heat up, and then add the garlic.

Let it cook for about a minute, and then add celery. Celery can take a while to cook, so you can add ¼ cup of water and cover for a minute, and then stir fry for 2-3 minutes. It should be a more vibrant green.

Now add the eggs in to the pan. Cover and allow the eggs to cook, it should start solidifying.

Once it is mostly solid, scramble everything together, and add salt and pepper to taste.

Remove from heat and serve!

Storage & Reheating
Storage:
- Cool completely before storing.
- Refrigerate in an airtight container for up to 2-3 days.
- Not recommended for freezing (celery and eggs lose their texture).
Reheating:
- Stovetop (best): Reheat in a pan over medium heat with a splash of oil or water until warmed through.
- Microwave: Heat in short 20-30 second bursts, stirring in between, to avoid overcooking eggs.

FAQ
Can I use a different vegetable?
Yes! We often stir fry eggs with tomatoes for example, but you can stir fry with napa cabbage, spinach, or Chinese chives! Try it with your fave veggie.
Do I need to peel the celery?
Not always, but if your celery is older and has tough strings, you can peel the outer ribs for a more tender bite. If you had asked my mom this tho the answer is always yes lol

A neutral oil like vegetable, avocado, or canola works best for stir fries.
Can I make it spicier?
Yes - toss in a dried red chili pepper or a small spoonful of chili crisp while stir frying the celery.

This dish pairs perfectly with steamed white rice, congee, or as part of a larger Chinese family-style meal.
