Switch up your regular weeknight dinner routine with this Pork Stir Fry with Cabbage! It is easy to make and delicious. Marinated sliced pork stir fried with ginger, carrots, and cabbage.

Funnily I made this dish because I only had pork tenderloin defrosted and I had Taiwanese cabbage (you can use regular cabbage as well) I had to eat while it remained fresh. But it turned out so tasty! The cabbage and carrots have a natural sweetness that adds to the dish.

About the Ingredients

Here's some information about the ingredients!

  • Pork Tenderloin - I bought pork tenderloin because I knew it would be super tender for stir fries, but you can also use pork loin (most common) or pork shoulder (if you prefer a slightly fattier option). Just make sure to slice or cut in to bite size to prepare for stir fry!
  • Soy Sauce - Other than soy sauce adding a delicious flavorful, it also acts as a brine in the marinade which helps tenderize the meat.
  • Corn Starch - The corn starch is used for its velveting effect. This is commonly used in Asian cooking as it crates a thin coating of the pork (or whatever meat you are marinating) and this helps prevent it from drying out during stir fries. It also helps all the marinade ingredients cling to the meat.
  • Sesame Oil - Adds a tasty nutty flavor!
  • Ginger - Adds a bright warm and slightly spicy flavor to the dish!
  • Carrots - I added carrots because it's healthy, adds some sweetness and crunch to the dish, and also visually it provides a vibrant contrasting color!
  • Cabbage - I used Taiwanese cabbage because it is more tender and more sweet than regular green cabbage, but you can definitely use regular cabbage if you prefer.
  • Oyster Sauce - Enhances the flavor of the dish with a combination of sweet and umami taste. Make sure to add at the end of cooking.

About the Instructions

Here are the steps to make this tasty meal!

  1. Step 1: In a mixing bowl, add sliced pork, soy sauce, sesame oil, and cornstarch. Mix well to combine and allow it to marinate for 30 minutes (or up to overnight).

  1. Step 2: When ready to cook, in a large nonstick cooking pan or wok, heat cooking oil over medium-high heat. When the oil is hot, add ginger and carrots, and cook until ginger is fragrant.

  1. Step 3: Add marinated pork and allow it to cook until mostly browned, stirring constantly. Remove from heat and set aside.

  1. Step 4: Add cabbage to the skillet, and stir fry until tender. Then, return pork, carrots and ginger to skillet. Add oyster sauce and salt to taste. Remove from heat and serve!

Note: If you prefer softer carrots, add carrots when you add cabbage so they cook longer together.

Variations

This recipe is very customizable. Here are some things you can do to switch things up:

  • Spicy - add dried red chili peppers, chili oil, or chili crisps to the dish to kick things up a notch!
  • Add garlic - you can use garlic instead of ginger if you prefer. Or even better, use both!
  • Use different sauces - if you switch up the sauces you can have different flavors, such as teriyaki sauce, sweet and sour, etc.
  • Add or change veggies - you can skip the carrots, or add other veggies that are your favorites as well! Some ideas include broccoli, peppers, and onions.

  • ¼ cup carrots, sliced thinly
  • 8 oz cabbage
