This Chicken Asparagus Stir Fry is a delicious and easy Chinese dish! Marinated chicken stir fried with crunchy asparagus – healthy and tasty – what’s not to love!

What I love about asparagus is it’s not only tasty but it’s also very nutritious. Asparagus is super good source of fiber, folate, vitamins A, C, E and K! Those are all some great immune boosting vitamins, by the way.

Vitamin A – Vitamin A is highly important for human health. They’re essential for many processes in your body, including maintaining healthy vision, and making sure the normal function of your immune system and organs.

Vitamin C – This vitamin is necessary for the growth, development and repair of all body tissues. It’s involved in the formation of collagen, absorption of iron, the immune system, wound healing, and the maintenance of cartilage, bones, and teeth.

Vitamin E – Vitamin E prevents coronary heart disease, supports immune function, prevents inflammation, promotes eye health, and lowers the risk of cancer.

Vitamin K – Vitamin K is an important factor in bone health and wound healing and plays a role in blood clotting, bone metabolism, and regulating blood calcium levels.

How to cook Chicken Asparagus Stir Fry

First, gather your ingredients:

  • 1 lb skinless boneless chicken thighs cut in to 1 inch
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp cornstarch
  • 1 tbsp cooking oil
  • 1 lb asparagus, trimmed and cut in to 1 inch
  • 4 cloves of garlic, crushed
  • 2 tsp sugar
  • Salt to taste

First, diced your chicken in to cubes. In a zip lock bag or mixing bowl, mix chicken, cornstarch, soy sauce, sesame oil. Combine well and then set it aside to marinade for half hour.

In a cooking pan or wok, add cooking oil, and let it heat up on medium high.

Add garlic and chicken along with all the marinade sauce, and stir fry for about 2 minutes or until chicken is no longer translucent, and immediately remove chicken from heat by placing in a big plate or bowl and set aside (try to keep sauce in pan).

Add a little more cooking oil if your pan is too dry. Then, add asparagus and stir fry for about 5 minutes, or until asparagus start turning bright green.

Return the chicken back in to pan, and add sugar and salt, stir fry everything for about another 2-3 minutes or until chicken is cooked thoroughly and the asparagus is tender.

Remove from heat and serve!
