Pepper Lamb Stir Fry (with Ginger & Scallions)

This Pepper Lamb Stir Fry is a quick and flavorful dish that combines tender marinated lamb with crisp green peppers, fragrant ginger, and scallions. Whether you like it mild with bell peppers or crave a little heat with jalapeños or chili peppers, this versatile recipe has you covered!

What part of Lamb to use

Now I do a life hack when I cook this dish and buy pre-sliced lamb from the hot pot section of my local Asian supermarket. However, if you are buying lamb and slicing it yourself, that is just fine too!

Here are some recommended cuts of lamb for stir frying:

Rump

The rump is an individual muscle cut from the hind leg of the lamb. It's very tender and has a lot of flavor with a layer of fat too. This is a great cut for stir fries!

Tenderloin

Similar to beef tenderloin, lamb tenderloin is very tender and and also has a velvety texture. This cut is great for stir fries also!

Leg

The leg of lambs has is also a tender cut, and has a strong flavor. It's great sliced or cubed - and also makes a great cut of lamb for stir fries.

Types of peppers to use

You can cook this Pepper Lamb Stir Fry with different types of peppers! Did you know there’s over 600 types of peppers? That’s why I’m not going to list them all, but I’ll mention my two favorites:

Bell Peppers

Bell peppers come in various colors, and they actually all taste a little different. Green bell peppers have a grassy or vegetal flavor, while orange, red and yellow bells are sweeter and fruitier. The sweetest being red bell peppers.

The most common pepper to make with Pepper Steak or Lamb is Green Bell peppers, however, you could try other colors of bell peppers or a mix of them to play with the various flavors.

Jalapeno Peppers

This is actually our favorite pepper to stir fry Pepper Steak or Lamb with! Jalapeno Peppers add a kick to the dish. In order to not make it super spicy, make sure to remove the seeds and give it a good rinse.

If you are using Jalapeno Peppers, you can slice it length wise, or you can actually also slice it width wise, and leave the seeds in there. The latter will make it more spicy, so be warned!

How to make Pepper Lamb Stir Fry?

First, gather and prepare your ingredients:

  • 1 lb lamb, sliced thinly
  • Marinade:
    • 1 tablespoon light soy sauce
    • 1 tablespoon dark soy sauce
    • 1 tablespoon sesame oil
    • 1 tablespoon cornstarch
  • 1 tablespoon cooking oil
  • 1 teaspoon fresh ginger, sliced
  • 2 stalks scallions, cut 1 inch
  • 3 oz green pepper, cut ½ inch pieces
  • Red chili peppers (optional)

Combine lamb and marinade/sauce ingredients in a large bowl or zip lock bag. If you are about to cook it, let it marinade at the very least 15-30 minutes. If you are making this ahead, cover and refrigerate, and then remove from fridge 30 minutes before cooking.

In a large nonstick cooking pan, heat cooking oil over medium-high heat. When the oil is hot, add sliced ginger, lamb, and also red chili peppers (optional), and stir fry everything until mostly browned.

Add green peppers to the cooking pan. Stir fry for about 3 minutes or until peppers have softened (but not soggy yet).

Add scallions to the cooking pan. Stir fry everything for about 1-2 minutes or until lamb is cooked thoroughly.

Remove from heat and serve!

Ingredients

  • 1 lb lamb, sliced thinly
  • 1 tablespoon cooking oil
  • 1 teaspoon fresh ginger, sliced
  • 2 stalks scallions, cut 1 inch
  • 3 oz green pepper, cut ½ inch pieces
  • Red chili peppers (optional)

Marinade:

  • 1 tablespoon light soy sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch

Instructions

  1. Marinate the Lamb: In a large bowl or zip-top bag, combine the sliced lamb with all the marinade ingredients.
  2. Stir-Fry the Aromatics and Lamb: Heat cooking oil in a large nonstick skillet or wok over medium-high heat. Once the oil is hot, add the ginger, optional red chili peppers, and marinated lamb. Stir-fry until the lamb is mostly browned.
  3. Add Green Peppers: Add the sliced green peppers and continue stir-frying for about 3 minutes, or until the peppers are tender but still slightly crisp.
  4. Add Scallions and Finish Cooking: Add the scallions and stir-fry everything together for another 1–2 minutes, or until the lamb is cooked through and the vegetables are well combined
  5. Serve: Remove from heat and serve hot, ideally with steamed rice or noodles.

Notes

  • Lamb Tip: Lamb shoulder or leg works best—thinly sliced against the grain for tenderness.
  • Green Pepper Tip: You can substitute with red bell peppers for a sweeter flavor or a mix of both for color.
  • Make It Spicier: Add more red chili or a dash of chili oil when stir-frying.
  • Protein Swap: This dish also works great with thinly sliced beef or pork.
  • Leftovers: Tastes great the next day! Store in the fridge for up to 3 days.
