The other day, I had the hugest breakfast ever – I’m talking a giant ham and cheese omelet, some bacon, and avocado… 2 hours before lunch time. So when lunch time rolled around, I was like, okay. Let’s get real. You probably shouldn’t eat a crap load of food like you usually do for lunch. So I took a peek at the fridge, and found tomatoes, cucumbers, and avocados! Just FYI, these are some of my favorite things. Instantly, I am drooling thinking about a yummy Balsamic Tomato Cucumber Avocado Salad.
When I go out and order a tomato cucumber salad, it’s usually made with lemon juice. However, I wanted something a little different. Have you ever had avocados drizzled with balsamic vinegar? It’s like freakin’ delicious. So this is my personal version of Tomato Cucumber Avocado Salad with Balsamic Vinegar! Super yummy and super easy to make!
- 2 Roma Tomatoes
- 4 Baby Cucumbers
- 1 Medium Avocado
- 1 tbsp Balsamic Vinegar
- 1 tbsp Olive Oil
- Juice of 1/2 Lemon
Chop up your tomatoes, cucumbers, and avocado and place in a mixing bowl.
Add balsamic vinegar, olive oil, lemon juice in the bowl.
Carefully mix well. I use a large wooden spoon, and just swirl things around gently.
Pour in to serving bowl and serve!
