Shrimp and Egg Stir Fry (蝦仁炒蛋) is a classic Chinese dish made with marinated tender shrimp stir fried with fluffy scrambled eggs and chopped green onions.

Wild Caught Shrimp vs. Farm Raised Shrimp

I highly recommend wild caught shrimp over farm raised. Now, I am forced to get wild caught shrimp because I am allergic to farm raised shrimp. I break out in hives all over my face when I have more than like 3 shrimps.

Sounds like a pain, but at the same time it really is a blessing in disguise. I did some research on farm raised shrimp – and they are pretty nasty business. Skip to the next session if you are easily grossed out.

Most shrimp farms are super crowded and unsanitary, and loads of pesticides, antibiotics (some that are banned), and chemicals are used to prevent diseases, and this ends up in the shrimp. Salmonella and E. coli have also been detected in imported shrimp. ALSO, it is disgusting! Think mouse hair, rat hair, and pieces of insects – all things that can be found in shrimp farms. Anyway, sorry, this isn’t very appetizing… my point is get you some good wild caught shrimp! I normally buy Frozen, Peeled, and Deveined Shrimp.

Rice Cooking Wine (Michiu)

Michiu is also known as Rice cooking wine. It contains about 20% alcohol, and is very popular in Taiwanese cooking. Many folks get this cooking wine confused with another cooking wine – Shaoxing. The difference is that Shaoxing is lower in alcohol and darker. Michiu is more dry and has a higher alcohol content.

Michiu is commonly used in stir fry, soup, braising, and more. It’s equivalent to adding wine to western dishes, but it also helps eliminate a ‘raw flavor’ of seafood and meat dishes too.

How to make Shrimp and Egg Stir Fry

First gather your ingredients:

  • 1/2 lb shrimp, peeled and deveined
  • 1 tsp cornstarch
  • 1 tsp michiu / rice cooking wine
  • 1/2 tsp salt
  • 2 tbsp vegetable oil
  • 1 stalk of green onion, cut in to 1 inch length
  • 4 eggs, beaten
  • 2 tbsp water
  • Salt to taste

In a bowl, dump together 1 tsp of sea salt, 1 tsp of michiu/cooking sake, and shrimps.  Mix well together and then soak for about 5-10 minutes.

In another bowl, beat the eggs together.  Add in this bowl a tsp of sea salt, cornstarch, along with 2 tbsp of water.  Mix well.

In a cooking pan, add the cooking oi/fat.   Add half of the green onions, and shrimps and stir fry at high heat until shrimp starts to turn pink.

Add beaten eggs in to pan.  Let it cook for about 1 min allowing the egg to start solidifying and then start stir frying the whole thing so the eggs break apart.  Stir fry until the shrimps are almost cooked thoroughly.

Add the rest of the green onions, and stir fry until shrimp is completely cooked thoroughly.

Remove from heat and serve!
