By the way I use about ½ lb of large shrimp for this, this is about equivalent to 15 large shrimps. But you can use smaller or bigger shrimps if you want. Just know that the quantity of shrimp will differ.
Wild Caught Shrimp vs. Farm Raised Shrimp
I always recommend wild caught shrimp over farm raised - not just for flavor, but for health reasons. I actually have a shrimp allergy that only flares up with farm raised shrimp (hello, face hives 😅), so I've learned the hard way to avoid it.
Turns out, that might be a blessing in disguise - farm raised shrimp are often raised in overcrowded, unsanitary conditions, and can be treated with antibiotics, pesticides, and other questionable chemicals. Some imported shrimp have even tested positive for E. coli and salmonella.
So if you can, go for wild caught! I usually buy mine frozen, peeled, and deveined to save time.

Marinating the shrimp
We will be marinating the shrimp before we cook it. It's a simple marinade and the main point is to add some flavor to it and also tenderizing it. The marinade consists of some salt, cornstarch, and rice cooking wine.
The rice wine not only helps with flavor, but it's slight acidity also helps tenderize the shrimp. This is perfect especially if you do not have super fresh shrimp.
The cornstarch is used for its velveting effect. This is commonly used in Asian cooking as it crates a thin coating of the shrimp (or whatever meat you are marinating) and this helps prevent it from drying out during stir fries.
How to cook Shrimp Celery Stir Fry (Step by Step)
First gather your ingredients:
- ½ pound Large Shrimp , peeled and de-veined
- 1 tablespoon of cornstarch
- 1 tablespoon of michiu (Rice cooking wine)
- 1 scallion, chopped
- ½ tablespoon ginger, minced
- 3 cloves of garlic
- 2 tablespoons Cooking oil
- 8 stalks Celery , diagonally sliced
- Sea salt, as desired
In a large bowl, combine the shrimp with cornstarch and cooking wine. Gently toss to coat the shrimp, and then set aside.

Heat oil in a cooking pan or wok over high heat for about half a minute, and then add the shrimp.
Cook for about a minute, and then flip sides and cook for another minute or until shrimp turns pink and are no longer transparent. Remove shrimp from heat.

Add the ginger, garlic and celery and cook for about 4-5 minutes, stirring occasionally, until celery softens.

Add shrimp back in to wok/pan. Stir fry everything for about another minute.

Sprinkle scallions and stir for 1 more minute and add salt to taste.

Remove from heat, and serve!

I substituted 2 carrots for two celery stalks to add color and a little flavor variety. I grated the ginger which dispersed the flavor throughout.
I found that it took substantially longer to soften the vegs than the recipe calls for, but just keep an eye on them.
