Snow Peas Beef Stir Fry

I honestly don’t eat snow peas enough for how much I like them. I love how they add a crunch to any dish you add them to, and actually are pretty easy to cook too! This Snow Peas Beef Stir Fry is one of those dishes.

Snow peas always remind me of my Grandpa. When I was little, I ate very much like him – Meat is our favorite. Especially, giant chunks of meat. (Ground meat just didn’t hit the same!) But for some reason Grandpa always loved Snow Peas!

Just fyi – I now obviously also love seafood and veggies, but I will say that giant chunks of meat? Still probably my fave (Mmm, steak…)

Snow Peas

In case you’re not very familiar with snow peas, it’s a very popular veggie used in Chinese cooking. Here’s some additional info about this delicious and healthy vegetable!

You can buy snow peas fresh or frozen from the grocery store. I prefer fresh, and actually many grocery stores will have them already washed and packaged, ready to eat. You can eat snow peas cooked or raw.

A very popular to cook snow peas is to stir fry it (which is what we will do in this recipe.) To eat raw, you can add in salads and serve with dressing.

Prior to cooking or eating raw, you can remove the tough string around the pod. This is optional, but recommended if you prefer to not have to deal with the harder tougher parts of snow peas.

Snow Peas are packed with vitamin A and C, iron, magnesium, fiber, potassium, and folic acid. All this and being low in calories!

Thick Soy Sauce

I do not use regular soy sauce for this recipe. I use Thick Soy Sauce, aka Soy Paste. There’s actually many different types of soy sauce! Thick soy sauce is a lot thicker than your normal soy sauce. It has a richer, sweeter flavor, which is perfect for this dish.

If you can’t find any thick soy sauce, you can actually use regular soy sauce. If you do this route, here’s a couple of recommendations:

  • Add some sort of sweetener. Since Thick soy sauce is more sweet, you are now missing a flavor, so I would recommend adding a bit of sugar or sweetener of your choice.
  • Thicken it. Since Thick soy sauce is, well duh, more thick, you may want to add something to thicken the sauce. To do this, you can mix cornstarch and water in a separate bowl to create a thickener, and then adding it to the dish prior to adding the basil.

Or even more simple – Oyster sauce can often be used as a substitute because it is similar in texture and it is also salty and sweet at the same time.

Kimlan Soy Paste / Thick Soy Sauce

Lee Kum Kee Oyster Sauce

Ingredients

  • 1/4 cup Thick Soy Sauce (aka Soy Paste)
  • 2 tablespoons Rice Cooking Wine
  • 1 tablespoons Cornstarch
  • 1 pound Ribeye steak, sliced in to chunks
  • 3 tablespoons cooking oil of choice
  • 3 cloves of garlic, crushed
  • 8 ounces fresh Snow Peas, trimmed
  • (Optional) Chinese Dried Red Chili Pepper

Instructions

In a bowl, mix together the thick soy sauce, rice cooking wine, and cornstarch. Marinade the beef in the bowl or in a ziplock bag for about 15-30 minutes (or up to overnight, but make sure to put in fridge if over 30 mins).

Heat oil in a cooking pan or work over high heat. Add beef and garlic, and stir fry for about 1-2 minutes or until the outside is just browned. Remove from heat.

Add the snow peas and dried red chili pepper (optional) in the pan/work and stir fry for 2-3 minutes, or until the snow peas are vibrant green/crisp tender.

Add the beef and garlic in and stir fry for 30 seconds – minute, until beef is cooked to the temperature you want.

Remove from heat and serve!

Yield: 4 servings

This Snow Peas Beef Stir Fry is not only delicious but also easy to make. The crunchy snow peas goes perfectly with the tender marinated beef!

Ingredients

  • 1 pound Ribeye steak, sliced in to chunks
  • 3 tablespoons cooking oil of choice
