About the Ingredients
- Salmon - Cubed into bite-sized pieces, it cooks quickly and soaks up the honey soy marinade. Fresh or previously frozen fillets both work.
- Soy sauce - The base of the marinade, giving salty, umami-rich depth.
- Honey - Adds a natural sweetness that balances the soy sauce and helps the salmon caramelize slightly.
- Garlic - A must-have for stir fries, it builds flavor right into the marinade and the dish.
- Cornstarch - Helps thicken the sauce and coat the salmon for a silky finish.
- Onions - Add sweetness and texture once stir-fried.
- Bell peppers - Bright, colorful, and slightly sweet - they pair beautifully with salmon.
- Mushrooms - Earthy white button mushrooms round out the dish and soak up all that savory sauce.
How to cook Salmon Stir Fry with Vegetables (Step by Step)

First, gather your ingredients. The ingredients listed here serve about 4 people (just fyi, in my pictures I was cooking for just me, so expect that yours will look like a lot more than mine). The ingredients are:
- 16 oz salmon
- Marinade:
- 4 cloves garlic, minced
- 2 tablespoon olive oil
- ½ cup soy sauce
- ¼ cup honey
- 2 teaspoon cornstarch
- 2 onions, sliced
- 2 bell peppers (any kind - green, red, yellow), sliced
- 16 oz white button mushrooms, sliced
Pat the salmon down with a paper towel to dry, and then cut into 1 inch cubes and set in a mixing bowl.

In the bowl, add soy sauce, corn starch, honey, and garlic, and toss to coat. If you are about to cook it, let it marinade at the very least 15-30 minutes. If you are making this ahead, cover and refrigerate for 30 minutes before cooking.

Heat 1 tablespoon oil in a cooking pan or wok, wait for the pan to heat up. Then using tongs, transfer salmon chunks in to pan, leaving some marinade in the bowl to be used later. Stir fry gently for about 5 minutes or until opaque and remove from heat.

Add onions, peppers and mushrooms, and the marinade sauce that's left in the bowl. Stir fry for about 4 minutes or until veggies have softened.

Now, add the salmon back in to the pan. Stir fry everything together for about 1 more minute or for longer if you want it more well done. This is also a great time to taste and add salt as desired.

Remove from heat and serve!

Storage & Reheating
Storage:
- Keep leftovers in an airtight container in the refrigerator for up to 2-3 days.
- Not recommended for freezing - salmon can dry out and the veggies lose texture once thawed.
Reheating:
- Stovetop (best): Heat a splash of oil or a tablespoon of water/broth in a skillet or wok. Add the stir fry and warm over medium heat for 2-3 minutes until hot.
- Microwave: Place in a microwave-safe dish, cover loosely, and heat in 30-second intervals, stirring in between, until warmed through.
Frequently Asked Questions
Can I make this ahead of time?
Yes! You can cube and marinate the salmon up to 24 hours in advance, and pre-slice the veggies. Store separately in the fridge, then stir fry fresh when ready.
Can I use frozen salmon?
Absolutely. Thaw the fillets completely in the fridge (overnight is best) or in a bowl of cold water for 20-30 minutes, then pat dry before marinating.
What other vegetables can I use?
This stir fry is very customizable! Try broccoli, snap peas, zucchini, or baby corn if you want variety.
Can I adjust the sweetness or saltiness?
Yes! Add more honey for a sweeter glaze or more soy sauce for a saltier, umami boost. Taste at the end and adjust to your preference.
What should I serve this with?
Steamed white rice is classic, but brown rice, fried rice, or even noodles all soak up the sauce beautifully.

Try again.
Edit: Sub broccoli and cauliflower for the mushrooms and green peppers. Or make him pick them out and give them to me. The onions are keepers!
