We almost always have a soup to go with our dinner – and this Seaweed Egg Drop Soup is an easy one that is on the rotation!

What is Seaweed Egg Drop Soup?

Egg drop soup is a Chinese soup of wispy beaten eggs in chicken broth.

Seaweed egg drop soup is made very similar to regular egg drop soup, except with the addition of dried seaweed. This adds an additional umami taste to the soup, and additional health benefits!

While egg drop soup is one of the most common Chinese soups in the States, in reality at home, we almost never make just egg drop soup.

One of the popular homecooked soup is Tomato Egg Drop Soup. This is egg drop soup with the addition of tomato wedges – adding an additional layer of flavor, and more vitamin C too!

Chicken Egg Drop Soup with Shiitake Mushrooms

Another more meatier version I like to make is Chicken Egg Drop Soup with Shiitake Mushrooms! It is made with shredded chicken, sliced shiitake mushrooms, wispy beaten eggs in chicken broth.

Type of Seaweed

There are actually several different types of seaweed you can buy, so make sure you purchase the right one for this soup. You will want to buy the dried laver seaweed aka dried purple laver, aka zi cai 紫菜. It’s usually dried in round thick sheets.

Fun fact dried laver seaweed in Mandarin Chinese is zi cai 紫菜! Which directly translate to ‘purple vegetable’. You can kind of see how it is a bit purple in this picture of me holding it in the light in the corners:

You should be able to find them in your local Asian supermarket or even online on Amazon!

Is this soup Healthy?

This soup is not only easy to make and tasty, but it is also very healthy. The main pats of it are seaweed, eggs, and chicken broth.

Seaweed is very healthy as it contains lots of minerals and vitamins. There’s iodine, copper, iron, potassium, magnesium, and calcium. It’s also are high in fiber and contain Vitamins A, B, and E.

Eggs are also very nutritious, not only is it a great source of protein, but it is also very nutrient dense. Eggs are high in Selenium, Phosphorus, Choline, Vitamin B12, and other antioxidants that keep you healthy! It also raises your good cholesterol!

How to make Seaweed Egg Drop Soup

First gather your ingredients:

  • 2 sheet seaweed, torn in to smaller pieces
  • 2 eggs, beaten
  • 3 cup chicken broth
  • Salt, as desired
  • 1/2 tbsp sesame oil
  • 1 green onions, chopped

If you haven’t already, tear the seaweed in to smaller pieces, it doesn’t have to be super small, this will just help it not all be tangled up when you eat the soup later.

In a soup pot, add chicken broth and the dried seaweed and bring to a boil.

Remove the pot from heat. I usually just set it on another non-heated stove. We want the soup to not be boiling and cool a little for the next step

Slowly pour the beaten eggs in to the soup. Using chopsticks or forks, slowly stir the eggs.

The eggs will cook and look like long yellow and white strands.

Add sesame oil, salt to taste, and mix well. Sprinkle the chopped green onions at the end so that it remains fresh green.

Remove from heat and serve!
