This Pepper Steak Recipe is delicious and easy to make! Now, I've had Pepper Steak in American Chinese restaurants before, and while they are pretty yummy too, they are not as delicious as the ones my mom makes - this is her recipe!

Peppers
You can cook this Pepper Steak with Onion Stir Fry with different types of peppers. Did you know there's over 600 types of peppers? That's why I'm not going to list them all, but I'll mention my two favorites:
Bell Peppers
Bell peppers come in various colors, and they actually all taste a little different. Green bell peppers have a grassy or vegetal flavor, while orange, red and yellow bells are sweeter and fruitier. The sweetest being red bell peppers.
The most common pepper to make with Pepper Steak is Green Bell peppers, however, you could try other colors of bell peppers or a mix of them to play with the various flavors!
Here's when I made it with red, yellow, and orange sweet bell peppers!


Jalapeno Peppers
This is actually our favorite pepper to stir fry Pepper Steak with! Jalapeno Peppers add a kick to the dish. We like to slice it lengthwise and then cut it in to bite size pieces. In order to not make it super spicy, make sure to remove the seeds and soak it in water for 15 minutes.



If you do like it super spicy, you can slice it horizontally and leave the seeds in there.
Steak
The trick to tender steak is two parts:
- I recommend using flank steak, sirloin, skirt steak, ribeye for this stir fry. Those are more tender cuts and are less likely to be tough.
- The marinade! Which is part of the recipe. But basically the longer you marinade the better, but even 15 minutes will make a difference. If you do choose a cut that is not as tender, make sure to marinade for longer (at least two hours).
In this recipe I used flank steak - it worked out very well!
How to cook Pepper Steak

My instructions below show you how to cook Pepper Steak on the stove. You can use a wok, cast iron, cooking pan, or skillet.
First gather your ingredients:
- 1 lb beef, sliced or cut into bite-sized pieces
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon cornstarch
- ½ teaspoon sugar
- 1 tablespoon cooking oil (or fat of your choice)
- 1 tablespoon garlic, roughly chopped
- 1 cup peppers, cut into bite-sized pieces or strips
- ½ tablespoon oyster sauce
- Salt, to taste (for seasoning during cooking)
- Chopped green onions (optional, for garnish)
In a medium bowl, mix the sliced beef with soy sauce, sesame oil, cornstarch and sugar. Let it marinade for at the very least 15 minutes. You can marinade overnight too, but be sure to let it marinade in the refrigerator.
Heat cooking oil/fat of your choice in a medium cooking pan. Add garlic and cook for about a minute, and then add beef. Stir fry for a minute or 2 or until it is mostly brown/cooked (but not completely). Remove the steak and garlic from pan and place aside.

Add peppers to pan, and stir fry until peppers are fragrant or until desired tenderness (for me I like it with some crunch still). Add the steak and garlic back to pan.

Add oyster sauce, green onions, salt to taste, and stir fry everything until steak is cooked to desired doneness. Remove from heat and serve!



Pepper Steak

A quick and flavorful Chinese-inspired dish featuring tender marinated beef and vibrant stir-fried peppers!
Ingredients
- 1 lb beef, thinly sliced against the grain or cut into bite-sized pieces
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon cornstarch
- ½ teaspoon sugar
- 1 tablespoon cooking oil (such as vegetable, canola, or peanut oil) or your preferred fat
- 1 tablespoon garlic, roughly chopped
- 1 cup bell peppers (any color or combination), cut into bite-sized pieces or strips
- ½ tablespoon oyster sauce
- Salt, to taste
- Optional garnish: Chopped green onions
Instructions
- Marinate the Beef: In a medium bowl, combine the sliced beef with the soy sauce, sesame oil, cornstarch, and sugar. Mix well to ensure the beef is evenly coated. Allow the beef to marinate for at least 15 minutes at room temperature. For a deeper flavor, you can marinate it overnight in the refrigerator. If refrigerating, bring the beef to near room temperature before cooking.
- Sauté Aromatics and Brown Beef: Heat the cooking oil or fat in a medium to large skillet or wok over medium-high heat. Add the chopped garlic and cook for about 30 seconds to 1 minute, until fragrant (be careful not to burn it). Add the marinated beef to the pan and stir-fry for 1 to 2 minutes, or until the beef is mostly browned but not fully cooked through. Remove the beef and garlic from the pan and set aside.
- Stir-Fry the Peppers: Add the sliced bell peppers to the same pan. Stir-fry them for 2 to 3 minutes, or until they are fragrant and reach your desired tenderness. Some people prefer them with a slight crunch, while others like them softer.
- Combine and Finish: Return the partially cooked beef and garlic to the pan with the peppers. Add the oyster sauce and a pinch of salt to taste. Stir-fry everything together for another 1 to 2 minutes, or until the beef is cooked to your desired doneness and the sauce has coated everything nicely.
- Serve: Remove the pepper steak from the heat. If desired, garnish with chopped green onions before serving. Serve hot with rice or noodles.
Notes
You can use any type of peppers you like! Jalapeno peppers, regular green peppers, colorful bell peppers, etc.
