What actually is Teriyaki?
Teriyaki is actually a Japanese cooking method where you grill or broil meat or fish with a mixture of soy sauce, rice wine (traditionally mirin), and sugar (or honey).
"Teri" (照り) means the shine or luster given by the sugar content, and "yaki" (焼き), which refers to the cooking technique of grilling / broiling.
Although teriyaki is often associated to Japanese cuisine, this cooking method is also commonly used other Asian countries also, such as Chinese, Taiwanese, Indonesian, and Thai cuisine.

So what is teriyaki sauce?
Nowadays around the world we often just think of the teriyaki sauce when we hear the word teriyaki.
The Teriyaki sauce is a savory and sweet sauce that can be used as a marinade, glaze, or dipping sauce that's made with soy sauce, rice wine, and sugar (and often times garlic and ginger are also added).
It's not hard to see why teriyaki sauce is so popular around the world. The flavor is so tasty with a balance of sweet, savory, and tangy!
The sweetness comes from the sugar / honey, while the soy sauce adds to the savory notes, and rice wine adding to some tanginess - while garlic and ginger add even more pow to the flavor!

How to cook Teriyaki Pork Stir Fry (Step by Step)

First, gather your ingredients! You'll need:
- 1 lb pork loin chops, cut in to bite size
- Marinade:
- ¼ cup soy sauce
- ¼ cup rice cooking wine
- 1 tablespoon brown sugar (or honey)
- 1 tablespoon cornstarch
- 2 tablespoon cooking oil, separated
- 1 teaspoon ginger, sliced thinly
- 4 cloves of garlic, chopped roughly
- 1 onion, sliced
- 2 bell peppers (any color!), seeded and sliced
If you haven't already, using a sharp knife, cut pork in to bite size.


In a mixing bowl, add the marinade ingredients with the pork. Combine well and then set it aside to marinade for about half an hour (up to over night!)


In a cooking pan or wok, add cooking oil, and let it heat up on medium high.
Add garlic, ginger, and pork along with all the marinade sauce, and stir fry for about 3 minutes or until pork is mostly browned, and immediately remove everything from heat by placing in a big plate or bowl and set aside.


Add another tablespoon of cooking oil. Then, add sliced onions and peppers. Stir fry for about 3 minutes, or until onions and peppers start getting tender. The onions will start turning translucent.


Return the pork and sauce back in to pan and sprinkle sugar and salt to taste. Stir fry everything for about another 2-3 minutes or until pork is cooked thoroughly and the veggies are tender.


Remove from heat and serve!



Storage & Reheat
- Fridge: Store leftovers in an airtight container for up to 3-4 days.
- Reheat:
- Stovetop (best): Add a splash of water or broth and stir fry over medium heat until hot.
- Microwave (quick): Heat in 1-minute bursts, stirring in between, until warmed through.

FAQ
Can I make it ahead of time?
Yes! You can marinate the pork up to 24 hours in advance, then cook when ready.
Can I use a different cut of pork?
Definitely - pork tenderloin or shoulder also work. Just slice thin for quick cooking.
What veggies can I substitute?
Bell peppers and onions are classic, but you can swap in broccoli, snap peas, zucchini, or mushrooms.

Ingredients
Marinade

Instructions
- Marinate the Pork
In a mixing bowl, combine pork with soy sauce, rice wine, brown sugar, and cornstarch. Mix well and marinate for at least 30 minutes (up to overnight). - Cook the Pork
Heat 1 tablespoon cooking oil in a wok or skillet over medium-high. Add garlic, ginger, pork, and marinade. Stir fry for about 3 minutes or until pork is mostly browned. Remove from pan and set aside. - Cook the Vegetables
Add remaining 1 tablespoon oil to the pan. Add onions and peppers. Stir fry for about 3 minutes, until tender and onions turn translucent. - Combine & Finish
Return pork and sauce to the pan. Sprinkle with a pinch of sugar and salt to taste. Stir fry for another 2–3 minutes, until pork is cooked through and vegetables are tender. - Serve
Remove from heat and enjoy hot with steamed rice.
Notes
- You can swap pork loin for pork tenderloin or shoulder (slice thin for faster cooking).
- Mix up the veggies — broccoli, zucchini, snap peas, or mushrooms also work well.
