King Oyster Mushrooms Stir Fry with Asparagus

King Oyster Mushrooms

King Oyster Mushrooms are large mushrooms from the oyster mushroom family – it is white, smooth, and have an elongated stem. These shrooms are very firm, some folks even describe it as ‘crunchy’.

You can buy king oyster mushrooms in your local Asian super market. Often times you can also find it in organic or natural grocery stores such as Whole Foods.

How to cook King Oyster Mushrooms Stir Fry with Asparagus

First gather your ingredients:

  • 1 tbsp cooking oil
  • 4 cloves of garlic, crushed
  • 2 king oyster mushrooms, sliced
  • 6 oz of asparagus, cut in to about 1-2 inch pieces
  • Salt and pepper, to taste

If you would like, trim asparagus so that the tough parts are gone. You can also peel your asparagus with a peeler if you prefer it that way. Cut asparagus in to 1-2 inch pieces.

Slice king oyster mushrooms in to bite sized chunks.

In a wok or skillet, heat oil on medium high heat, and add garlic. Stir fry for a minute.

Add the king oyster mushrooms and stir fry for about 2 minutes.

Remove lid and add the asparagus. Cook for about 5 minutes, stirring occasionally, or until asparagus is tender. The asparagus should be a bright green color, and the king oyster mushrooms should be tender and perhaps a bit browned in the edges.

Add salt and pepper to taste and mix well.

Remove from heat and serve!
