Mushrooms and Tomatoes Stir Fry might not sound like your typical dish, but it is actually one of those dishes that I make at my house all the time. It’s easy, yummy, and quick to make. What’s not to like? I especially love making this dish when I have fresh tomatoes from the garden!
Unfortunately, I don’t mean MY garden. But I know people. I have friends! I don’t just cook and eat all the time! Just kidding.
Anyway, something else awesome about this dish – tomatoes are also super healthy for you! It’s packed with vitamins (including vitamins A, C and E), and mushrooms have their own set of health benefits too!
Ingredients
- 8 oz of mushroom
- 1 large tomato
- 2 clove of garlic, minced
- Cooking oil/fat of choice
- 2 tsp Salt, or as desired
- 1/2 tsp Brown sugar, optional – this is not required, but I find that adding something sweet to the dish balances out the tangy/sourness of tomatoes very well.
Instructions
Slice your mushrooms, and cut up your tomatoes.
Heat cooking oil/fat in a large skillet or wok over medium high heat. Add the garlic and cook for about 30 seconds or until fragrant.
Add mushrooms to the dish first, and cook for about 2 minutes, stirring occasionally.

Now add the tomatoes to the pan and stir fry with the mushrooms for about 5 minutes or until the mushrooms and tomatoes are tender.

Add salt (and sugar, if you opted to do so). Stir well, and serve!
