Mushroom and Tomato Stir Fry – This veggie side dish is packed with flavor! Sliced mushrooms cooked with tomatoes is easy, yummy, and quick to make. What’s not to like? I especially love making this dish when I have fresh tomatoes from the garden!
Is Mushroom and Tomato Stir Fry healthy?
Short answer – yes, mushroom and tomato stir fry is a very healthy dish. Let’s take a look at the ingredients:
Tomatoes are full of nutrients including Vitamin C, Potassium, Vitamin K1, and Folate (Vitamin B9). It’s great for heart health, cancer prevention, and skin health.
Mushrooms are also packed with health benefits – they’re full of Vitamin B, Vitamin D, and also important minerals such as selenium, potassium and copper!
How to make Mushroom and Tomato Stir Fry?
Gather your ingredients:
- 8 oz of mushroom
- 1 large tomato
- 2 cloves of garlic, minced
- Cooking oil/fat of choice
- 2 tsp Salt, or as desired
- 1/2 tsp Brown sugar or honey, optional – this is not required, but I find that adding something sweet to the dish balances out the tangy/sourness of tomatoes very well.
Prepare your ingredients:
Slice your mushrooms, and cut up your tomatoes to 1-2 inch chunks.


Cooking:
Heat cooking oil/fat in a large skillet or wok over medium high heat. Add the garlic and cook for about 30 seconds or until fragrant.
Add mushrooms to the dish first, and cook for about 2 minutes, stirring occasionally.

Now add the tomatoes to the pan and stir fry with the mushrooms for about 5 minutes or until the mushrooms and tomatoes are tender.

Add salt (and sugar, if you opted to do so). Stir well, and serve!
