Stir Fry Asparagus with Garlic

There’s two different go to’s when I am making asparagus that I know making the ingredient delicious – One is oven roasting them, and the other?  Stir fry it, of course! These two methods will make the asparagus tender and yummy, and not mushy.  This Easy Chinese Stir Fry Asparagus with Garlic is one of my favorite ways.

About Asparagus

Asparagus is a very nutritious spring vegetable! It is a member of the lily family and is related to onions, garlic, and leeks. Asparagus is a good source of vitamins A, C, and K, and fiber and folate.

Though green asparagus is the more common variety, there is also white asparagus! The white variety is grown underground, and the green variety is grown above ground. White asparagus has a milder flavor than green asparagus, and is usually more expensive.

You can eat Asparagus raw, cooked or even juiced. Raw asparagus can be added to salads, sandwiches, wraps, and even sushi. Cooked asparagus can be steamed, roasted, grilled, stir fried, air fired and more! Asparagus juice is said to boost the immune system and improve digestion.

Asparagus is typically in season from April to June, though nowadays you can buy it year round. If you’re looking for good asparagus, look for firm and straight stalks, with no brown or wilted areas.

Here are some general tips for cooking asparagus:

  • Trim the bottom of the asparagus stalks (it’s usually very tough)
  • If the asparagus is thick, use a a peeler to peel the bottom 1-2 inch of the stalk
  • When cooking asparagus, cook it until it is tender but still crisp – mushy asparagus is not yummy

Ingredients

  • 1 tbsp cooking oil of choice
  • 1 bunch of asparagus
  • 3 cloves of garlic
  • Sea salt, as desired

Instructions

Trim your asparagus so that the tough parts are gone.  If you want, you can also peel your asparagus with a peeler if you prefer it that way. Cut the asparagus in to thirds.

Crush your garlic with the side of your knife.  Remove the skin.  You can now either mince it, chop it, if you have a preference, but I usually use it ‘smashed‘.

Heat cooking oil/fat in a large skillet over medium high heat. Add the garlic and cook for about 30 seconds, and then add the asparagus. Cook for about 10 minutes, stirring occasionally, or until asparagus is tender.

Add salt as desired and blend well. And… you’re done!  🙂
