Stir Fry Asparagus with Garlic

There’s two different go to’s when I am making asparagus that I know making the ingredient delicious – One is oven roasting them, and the other?  Stir fry it, of course! These two methods will make the asparagus tender and yummy, and not mushy.  This Easy Chinese Stir Fry Asparagus with Garlic is one of my favorite ways.

Asparagus is Healthy

Asparagus is quite healthy for you! 1 cup of cooked asparagus has 40 calories, 4 grams of protein, and 404 milligrams of potassium. That’s awesome because potassium is good for blood pressure. Asparagus is a nutrient-packed vegetable. It is a very good source of fiber, folate, vitamins A, C, E and K!

Ingredients

  • 1 bunch of asparagus
  • 3 cloves of garlic
  • Sea salt, as desired
  • 1 tbsp olive oil

Instructions

Trim your asparagus so that the tough parts are gone.  If you want, you can also peel your asparagus with a peeler if you prefer it that way. Cut the asparagus in to thirds.

Crush your garlic with the side of your knife.  Remove the skin.  You can now either mince it, chop it, if you have a preference, but I usually use it ‘smashed‘.

Heat cooking oil/fat in a large skillet over medium high heat. Add the garlic and cook for about 30 seconds, and then add the asparagus. Cook for about 10 minutes, stirring occasionally, or until asparagus is tender.

Add salt as desired and blend well. And… you’re done!  🙂
